The expensive and rare cinnamon variety is known as “Ceylon cinnamon” which is native to Sri Lanka. Due to unique chemical properties over other varieties, Ceylon variety has high reputation and demand in the world. Ceylon cinnamon contains more than 80 chemical components.

To produce the most valuable cinnamon, the bark must be made extremely thin. The thinner the quills are, the more costly they will be. Ruwanpura has spent 40 years mastering this skill. Soon after the bark is removed, each piece dries under the sun and curls up within a few minutes.

Another key difference between the two is found in the taste. Cassia Cinnamon tastes stronger and hotter while Ceylon Cinnamon is full of lighter, brighter citreous tones. When it comes to colour, Ceylon Cinnamon is tan brown whereas Cassia Cinnamon takes some reddish dark brown.
